Carrot-Apple Salad
1 cup shredded carrots
3 medium Golden Delicious or Gala apples, unpared and diced
1 Tbsp. lemon juice
1/2 cup raisins
1/3 cup cholesterol free, reduced calorie mayonnaise
Salad greens
Combine all ingredients
except salad greens. Chill thoroughly. Serve on salad greens. Makes 6
(2/3 cup) servings.
